Frozen Diced Garlic

 

Frozen diced garlic is a high-quality processed vegetable ingredient made from fresh garlic. Fresh garlic is harvested in the 

optimal ripening period from late spring to early summer, when the bulbs are plump, aromatic and rich in nutrients. After 

strict selection, fresh garlic undergoes standardized cleaning, peeling, dicing and ultra-low-temperature quick freezing.

Processing Procedures

The production of frozen diced garlic follows strict food safety standards with standardized procedures.

1, raw material selection and cleaning. Mature and intact garlic bulbs are screened to remove moldy, damaged and inferior 

garlic. The selected raw materials are cleaned to eliminate soil, dust and impurities on the surface.

2, peeling and sorting. Cleaned garlic is separated into cloves and fully peeled. Workers conduct secondary sorting to ensure 

all cloves are fresh, clean and free of discoloration and deterioration.

3, precise dicing. Qualified garlic cloves are uniformly cut into standard diced particles by automatic dicing equipment to 

ensure consistent size and appearance.

4, blanching and cooling. Garlic dices are briefly blanched to inhibit enzyme activity, prevent browning and stabilize flavor. 

Immediately after blanching, the dices are rapidly cooled to lock fresh texture and aroma.

5, quick freezing and packaging. The processed garlic dices are quickly frozen at ultra-low temperatures from -30℃ to -40℃. 

Rapid freezing forms fine ice crystals inside garlic cells, protecting its original taste and nutrients without adding any preservatives. 

6, qualified products are screened, sealed and packed in dust-free workshops and stored in low-temperature cold storage for 

long-term preservation.
