Frozen diced onion

Frozen diced onions, also called frozen onion dice, froze chopped onion, frozen onion cubes, are a hygienic, ready-to-eat 

processed vegetable product made from fresh, mature onions through chopping, washing, blanching, and single-quantity 

freezing (IQF).

High-quality raw onions are harvested in the China from late March to early October, at which time the onion bulbs are fully 

mature, with a balanced moisture and solids content and a mild flavor. Frozen diced onions undergo low-temperature 

processing immediately after harvest to lock in nutrientsand original flavor, and can be stored at -18°C for 18-24 months. 

Frozen diced onions eliminate the hassle of peeling, dicing, and eye irritation, and avoidthe spoilage, browning, and 

seasonal availability limitations of fresh onions, making them widely used in catering, food manufacturing, and home cooking.

Standard Processing Flow

1. Raw Material Selection: Remove rotten, damaged, or substandard onions, retaining intact, mature onion bulbs.

2. Peeling and Trimming: Remove the outer skin, roots, and stems using both machine and manual trimming.

3. Washing and Dicing: Thoroughly wash the onions and then dice them into uniform 6–10 mm cubes.

4. Blanching and Cooling (if need): Blanch in water at 90–98°C for 30–90 seconds to inactivate enzymes, then rapidly cool with 

ice water.

5. Dehydration and Flash Freezing: Drain surface moisture and then individually freeze at -35°C to -40°C within 12 minutes to 

maintain cell integrity.

6. Sorting and Packaging: Remove defective onion cubes, pass through metal detectors, then package and store at -18°C or lower.
